About our Team

Meet Zach

I’m Zach Toensing, a chef with 14 years of experience in professional kitchens. I grew up in Vermont, where I developed an appreciation for local ingredients and the people who produce them. My career has included working for the Denver Broncos, Hen of the Wood, and Foam Brewers, along with many other restaurants that shaped the way I think about food and hospitality.

After playing college football and graduating from Denison University, I eventually made my way to Denver, where I worked as a Performance Chef for the Denver Broncos. I prepared individualized meals for players and their families, as well as meals for the team and staff at the training facility in Centennial, along with pre-game meals at Mile High. Working in that environment gave me a much deeper understanding of how much food can be tailored to an individual.

I also specialize in live-fire cooking, something I've carried throughout my career. I enjoy working with wood, flame, and smoke and letting great ingredients speak for themselves.

I started Kickback because I wanted to give people an option for real, scratch-made food without having to spend their lives in the kitchen. I couldn't find a meal prep service that felt like the kind of food I wanted to eat, so I decided to build it myself. Local sourcing is a big part of that. I want to work with Colorado farmers and producers and help make those connections part of how people eat every week.
